Camembert with Caramelised Onion Chutney with Port

This is one of the easiest lunches to prepare and for when you can have loved ones visit (post Covid!) a deliciously pleasing starter.

You need:

1 pack of pre-rolled Puff Pastry (you can make your own but pre made, for the money, I think very good)

1 whole Camembert Cheese Wheel

1 Jar of In A Sticky Pickle's Caramelised Onion with Port Chutney

1 egg

Baking parchment

Take your puff pastry out of the fridge to start coming up to room temperature

Pre-heat your oven to 180C

On a lightly floured surface roll out your pastry, if it's pre rolled I like to just roll it a little more to ensure its flat. Using the cheese box as a template cut two circles of pastry large enough for the cheese to sit on and go a little way (1 cm) up the sides, with the remaining pastry cut a long strip that will go around the side of the cheese and a little deeper than the depth of the cheese.

Line a baking tray with parchment paper and place one of the pastry rounds on it now place 1-2 generous dessert spoons of the Caramelised Onion Chutney with Port and spread over leaving the edges of the pastry free, the richness of the port works so well with the Camembert, now take the cheese out of its wrapper and place it on the Caramelised Onion Chutney with Port. Place the second pastry round on the top of the Camembert and let the excess drop down the sides of your Camembert, gently shape the bottom of the pastry round up the sides of the Camembert the bottom of the pastry round, carefully egg wash the edges of the long strip and stick it to the pastry base and top around the sides to seal in the Camembert. Brush your egg wash over to give your finished dish a golden brown shine, place in the centre of your heated oven for 25-30mins.

Serving suggestions: a small green salad or Asparagus wrapped in Pancetta

It doesn't get much easier with delicious results than this!

Take care lovely friends & stay safe x
